Welcome to Bouffant, the coast’s newest pastry franchise headed up by one of the region’s best hospitality operators

Running food venues around the Central Coast for around 15 years, Andrew Mansfield is a man who knows how to satisfy a growing number of local foodies.

His East Gosford café Ooomph has seen patrons queuing out the door for years, with café-goers loving the high-quality coffee, delicious flaky pastries, organic local products and buzzy atmosphere.

Having previously opened Ooomph Avoca and Harryfields at Mosman, the hospitality powerhouse has now branched out on a new venture; opening three new pastry venues in East Gosford and Gosford and another soon to open its doors in Terrigal.

With the tagline ‘fluffy goodness for everyone’, Bouffant is a brand inspired by Mansfield’s relationship with Swiss Spanish pastry chef Markus Kunz, who has worked with him on and off for six years.

The pair based the concept on the popular Spanish bakery ‘Granier’, whereby the owner mastered the formula of crafting quality pastries at an affordable price.

“The croissants don’t all need to look perfect or the same, it is all about ensuring that the texture and taste are perfect, which Markus has really perfected,” Mansfield says.

“So far the result in East Gosford has been phenomenal. People seem to love buying large quantities and sharing with friends. There is so much happy chatter from patrons in our establishment.”

With everything made in the commercial kitchen before 5am by Markus, the bakery offers a multitude of guilty pleasure items that will leave you drooling for your next cheat meal. Think buttery, flaky almond croissants, melt in your mouth mini danishes, moreish vanilla tarts oozing with custard, perhaps a glazed caramel-filled donut.

However, it is the signature pastry that people are really going nuts for. Made from croissant pastry, the Bouffant is a truly delectable sweet treat. Baked fresh and bursting with delicious filling, popular flavours include lemon meringue and vanilla slice.

And isn’t just the sweet-tooth’s who will have a field day in here. There is freshly baked sourdough, cheese toasties, mushroom pies and of course the top quality barista-made coffee for which Ooomph is so well-known.
